Batch cooking...it makes week night meals quicker and easier! My other trick for healthy week night dishes is memorizing my weekly staples that I need to get at the grocery store. These items are at the top of my list so I get them every time I go to the store: fruit for breakfast, assortment of veggies for raw snacking and meal side dishes, oats, hummus, grains like rice and quinoa, and an assortment of beans.
