My healthy lunch strategy...

I always keep fresh collard green leaves and tortillas in my fridge. At night, I save a bit of dinner's salad to put in a tortilla wrap the next day for lunch. I also love to wrap leftover dinner in a large fresh collard green leaf and eat it like a wrap.

The fresh collard leaf, which I often use as the wrap alone without a tortilla, is loaded with Vitamin A, K, C, fiber, calcium, manganese, and B Vitamins to name a few. Raw collard greens lower cholesterol and have cancer-fighting glucosinolates.
